Introduction

Ingredients

    1 cup dry lentils
    .25 cups red quinoa
    1 large onion
    1 bag mixed bell pepper slices (frozen)
    1 package spinach palak paneer (trader joes)
    .25 cups quinoa flakes (use only if too much moisture)

Directions

cook lentils and quinoa, drain and mix with all ingredients except zucchini.

peel and slice zucchini in rings or cut lengthwise to form "boats" stuff with lentil mixture, bake covered for approx. 1.5 hours at 390 degrees. makes 6 to 8 servings
