Introduction

Ingredients

    1 1/2 Envelopes Knox Unflavored Gelatin (aprox. 1 Tbsp)
    3/8 C cold water
    3 1/2 C whole cranberries
    1 3/4 C Cranberry Juice Cocktail
    zest of one brightly colored orange or tangerine
    1 Cinnamon Stick
    3 Whole Allspice Berries
    1 whole Clove

Directions

In small Bowl, sprinkle gelatin over cold water; set aside to soften.

In a 2-quart sauce pan, pour in cranberries, juice and a tea ball or sachet made from cheesecloth filled with zest, cinnamon stick, allspice and clove. Bring to a boil; cook 5-8 minutes over a medium flame.

After cranberries have popped, remove from heat. Discard sachet and run through a food mill to remove the skins and seeds. Return to the sauce pan and add the sugar; stir well. Bring back to a boil; cook 8 minutes more.

Remove from the heat. Add 1 ladle of hot liquid to the softened gelatin; stir well. Add the gelatin mixture to the cranberry mixture; stir until gelatin is dissolved.

Pour into 3 cup gelatin mold or serving bowl. Chill until set.

Makes 48-1 Tbsp. servings.
