3/4 C onion, chopped
15 baby carrots, cut into bite-sized pieces
4 stalks celery, sliced
3 medium potatoes, cut into 1/2" cubes (peel them if you must, I like them skins-on)
1/2 T. olive oil
9 oz. leftover roast beef, chopped w/ visible fat removed
1 can (14 oz) Swanson Reduced Sodium Beef Broth
1 1/2 C water
1/4 - 1/2 T. pepper, to taste
Makes 6 1-cup servings.
