5 large chicken breasts
1 single serve Crystal Light Lemonade Mix
1 tbsp onion flakes or 3 tbsp fresh chopped onion
1 tbsp minced ginger or 2 tsp dried
1/2 cup water
1 lemon, juiced & sliced (reserve juice)
2 tbsp cornstarch
2 tsp Splenda
Remove chicken and set aside. Pour cooking juices into a saucepan and bring to a low simmer on the stove top. Make a rue with the cornstarch (put in a small bowl and add 2 tbsp of water and stir until it's a paste). Stir cornstarch rue into simmering cooking juices and whisk until it becomes a thickened sauce. Stir in the fresh lemon juice and the splenda. Pour over the chicken and toss to coat.
Serve over rice.
