Hasselback Potatoes

Introduction

Number of Servings: 4

Ingredients

    *Potato, raw, 4 small (1-3/4" to 2-1/2" dia.)
    Olive Oil, 3 tbsp
    Parmesan Cheese, grated, 3 tbsp
    Paprika, .5 tsp
    Salt, 1 tsp
    Fresh Chives, 2 tbsp chopped
    Garlic, 4 cloves

Directions

Slice potatoes in 1/8" slices leaving 1/4" unsliced at the bottom so the potato stays together.
Mix up all the other ingredients, put a bit between each slice. Rub the remaining oil on the outside.
Bake at 425 for 40 minutes until tender.
The potato will fan out a bit as it cooks

Serving Size: Makes 4 servings.

  • Made these for dinner tonight - delicious ! I also made hasselback zucchini and yellowsquash and it was tasty too ! I would like to try recipe as listed. But tonight I used canola spray instead of olive oil and garlic salt, pepper, garlic & herb seasoning, onion powder and paprika. - 7/29/12
