Strawberry Champagne Ice Pops

Introduction

A cool, delicious treat for the grownups on a hot day. Basically fat free, and you can adjust the sugar (or use substitute) to your preferences, but these are so low-cal, you might as well get a little bit of the real thing.

Want to make it kid friendly? Swap out sparkling grape juice for the champagne.

Number of Servings: 10

Ingredients

    1/4 cup water
    1/2 cup sugar
    1 1/4 pounds of strawberries (fresh or frozen, I used frozen)
    2 tablespoons lemon juice
    1 cup champagne (or sparkling grape juice)

Directions

1. Combine water and sugar. Melt in microwave for 3 minutes, stir to combine evenly.
2. Puree strawberries in a food processor or blender. Add lemon juice, water/sugar syrup, and champagne.
3. Pour into ice pop molds. Freeze 4 hours or until frozen solid.

Serving Size: makes 10-12 pops
