Susan's Pumpkin Soup

Introduction

Made this up from ingredients we had on hand to use up extra Long Neck Pumpkin we had leftover. Made this up from ingredients we had on hand to use up extra Long Neck Pumpkin we had leftover.
Number of Servings: 32

Ingredients

    4 tbsp Olive Oil
    1 cup Onions
    5 stalk Celery
    12 cup Pumpkin
    3 large Apples
    9 cup (8 fl oz) Chicken Broth
    4 tsp Garlic
    1 tbsp Allspice
    3 tsp Cumin seed
    1 tbsp Ginger
    1 tsp Nutmeg
    2 tsp Black Pepper
    1 tsp Salt
    1/2 cup Half and Half
    1 cup Fat free half and half
    3 cup Milk

Directions

Cut Pumpkin into large pieces, coat with Olive Oil bake at 350 for 30 min.

Course Chop remaingin ingredients.

In very large soup pot heat Olive Oil, add apple, onion, shallot, garlic, pumpkin, celery.

Mix thoroughly, bring to a boil. Add Chicken broth and all the spices, salt and pepper. Bring to a boil, reduce heat to med-low. Cover pan and simmer for 30 minutes or until apples and celery are soft.

Let cool slightly, in small batches puree soup. Mix in milk and half & half. Season to taste. Serve hot or cold.

Makes 32 1-cup servings.
