Ingredients

2 med-large cucumbers
1 onion
1/4 cup red wine vinegar
1/2 cup low-fat greek yogurt
salt & pepper to taste
Directions
Thinly slice cucumbers and onions. Toss with remaining ingredients. Serve immediately or refridgerate for several hours to allow flavors to mellow and meld.
