Purple Green Bean Stir Fry

Introduction

Number of Servings: 6

Ingredients

    1 whole Zucchini
    1 bag (5 servings) Trader Joe's Large Cooked Shrimp
    1/2 Portabello Mushroom (est 100 g)
    approx 40 Purple Beans
    3 cloves Garlic
    1 large green onion (more to taste)
    1 Kolerabi, diced
    2 leaves of Swiss Chard

    Chinese 5 Spice (approx 2 tsp, to taste)
    Minced Dried Garlic (a few shakes)

    For the wok:
    2 tbsp Sesame Oil
    3 tbsp Grapeseed OIl
    2 tbsp Citrus Ponzu

Directions

Break off ends of the purple green beans, and break in half. Chop the rest of the veggies pretty big/oversized so that they don't overcook while you're waiting for the green beans to finish.

Heat some sesame and grapeseed oil in a wok. Add the crushed and diced garlic cloves, and sliced green onion. Stir & shake. Add the rest of the veggies and cook until the purple beans turn green and are tender. Add Ponzu sauce to taste.

Prep shrimp by defrosting and sprinkling liberally with Chinese 5 Spice.

Remove veggies from the wok. Heat more sesame and grapeseed oil. Let it get hot, add shrimp and cook until just heated (since they're pre-cooked, do not overcook). Add minced, dried garlic.

Toss cooked veggies back in the wok right before serving. Suggested (not calculated) pairing with brown rice. Serve with reduced-sodium soy sauce (not calculated).
