Custard Rice Pudding

Number of Servings: 10

Ingredients

    1 1/4 cups of eggbeaters
    1 teaspoon salt
    1/4 cup plus 2 teaspoons Slendra blend for baking
    2 cups skim milk
    2 cups 2% milk
    1 cup cooked rice
    1/2 cup raisins

Directions

Preheat oven to 350 degrees.
In a 21/2 qt. baking dish place cooked rice and raisins.
In bowl mix eggbeaters, salt, and sugar. Add milk and mix together, pour over rice and raisins. Place baking dish in pan of water to depth of 2 inches. Bake for 11/2 hours.
Sprinkle cinnamon on top if desired.

Makes 10 - 1/2 cup servings
