Swiss Chard or Escarole and Potato Soup

Introduction

Number of Servings: 2

Ingredients

    6 C Chard (stems removed and coarsely chopped)
    OR
    1 lg. head of escarole,cut up
    2 med. Potatoes (peeled, and cut up)
    1 med. onion (sliced)
    3 Tbsp olive oil
    1 10 1/2 oz can chicken broth
    8 oz. Plain yogurt
    salt and pepper to taste
    1/4 tsp. oregano (optional)

Directions

8 C Stock pot
1. saute onion and garlic in olive oil until soft
2. Add chard and continue to saute until chard is wilted
3. Add chicken broth and potatoes. Bring to boil and simmer for 25 minutes
4. Cool slightly and Puree in pot using immersion
Blender. Spoon yogurt on top just before serving.

Serving Size: 2 generous 1 1/2 cup servings
