Zucchini Soup

Introduction

Ingredients

    6-8 fresh zucchiini ( unpeeled,& sliced in 1 in. pieces
    1 lg. sliced onion
    1 Tbsp. olive oil
    2 10oz. cans low fat chicken or veg. broth
    salt & pepper to taste
    plain yogurt (optional)

Directions

Using a large soup pot with lid:
1. Saute sliced onions in olive oil until soft but not
brown.
2. Add sliced zucchini and broth
3. bring to boil, cover and then simmer for 30 min.
4. Allow soup to cool and puree in pot type using
an immersion blender.
4. Reheat when ready to serve.
You can add a dollop of yogurt or sour cream if desired just before serving
