Ingredients

    1.5 cups cooked white rice
    2 cups nonfat milk, divided
    1/3 cup sugar
    1 egg
    1 tsp. vanilla
    1 Tbsp butter
    1/4 cup raisins

Directions

Add 1 1/2 milk, sugar, and rice in medium saucepan and cook about 15 minutes or until creamy, on medium to medium high heat, stirring frequently. Meanwhile, beat egg in the other 1/2 cup milk. When rice is creamy, add raisins and cook another 2-3 minutes. Then turn down heat to low and add egg/milk mixture. Cook another 3 minutes, stirring constantly. Turn off heat. Add vanilla and the pat of butter. Stir. Put in serving bowls and serve warm or cold.
