Simple Rhubarb CakeSubmitted by: CONQUERGRAVITY
Rhubarb, 1.5 cup, diced
Brown Sugar, 1.5 cup, packed
Applesauce, unsweetened 1/3 cup
Egg, fresh, 1 large
Buttermilk, 1 cup
Flour, whole grain, 2.5 cup
Baking Soda, 1 tsp
Salt, 1 tsp
Cinnamon, ground, 1 tsp
Sugar In The Raw, 1 tbsp
Combine dry ingredients. Combine wet ingredients. Mix the two together. Fold in rhubarb, mix evenly. Pour into a greased 9 x 13 baking pan. Sprinkle large crystal sugar (sugar in the raw) over the top.
Bake at 325 for 40 minutes, or until a toothpick comes out clean.
Serving Size: Makes 30 2 inch squares
