zucchini lasagna without lasagna noodles

Ingredients

    A large zucchini, approx. 2 lbs
    27 oz bottle of spaghetti sauce
    6 - 7 oz of shredded mozz. cheese
    1 cup chopped mushrooms
    1/2 cup ricotta cheese

Directions

1. Slice the zucchini length wise (6 slices, enough for 2 layers)
2. Pour half cup of sauce in a baking dish (9x12)
3. Place one layer of zucchini slices (about 3 lengthwise)
4. Mix about 4 oz. mozzerella cheese with mushrooms and ricotta (mixture)
5. Layer the mixture on top of the lasagna
6. Place another layer of zucchini slices
7. Top it with the rest of the sauce and mozzerella cheese
8. Cover with a foil and bake for 30 mts in a preheated oven (375- 400 degrees)
9. Serve hot and enjoy!
