To make the recipe match the picture: Cut each zucchini into 6-8 horizontal slices and grill each slice just 1-2 minutes per side until pliable. Remove from the grill and cool slightly. Place 1/2 to 1 teaspoon of filling on one end of each slice and roll up tightly; seal with picks if desired. - 7/9/12

Tasty and simple. I recommend scooping out the cut side a bit to reduce seeds and provide a trench for toppings. - 7/21/11

It is so frustrating to me that the pictures don't really go with the recipes on this site. You cannot achieve that look with this recipe, so then have to figure it out on your own. Aside from that dissapointment, the picture negatively impacts the actual recipe, which is a good one but not a match. - 6/18/12

I have done this for years with summer squash as well, with a small amount of sliced cheese (provolone or swiss) melted, and fresh or dried dill on top. The family loves it! I'm so happy for another variation! - 8/2/11

Awesome flavor! I did scoop it slightly and slice a bit off the back to stabilize it on the grill. I definitely will make this again. - 9/15/11

please allow picture to match the recipe - it is really deceiving and honestly I spend more time trying to figure out what I am missing than the simplicity of a recipe. - 7/9/12

I also make a little trench for the toppings, and I love the idea of slivering a little off the back so they stay flat on the grill. This is such an awesome and easy way to eat healthy. - 8/2/11

I made this recipe in my Calphalon Grill Pan. Turned out great! I also sliced a thin piece off the back so they would lie flat in the pan when they are turned over to add the toppings - 8/1/11

I tried this the other night with the following variations: I baked the zucchini in the oven at 350 with a spray of olive oil and salt and pepper until cooked thru. Then I spread on the pesto and sprinkled on grated swiss cheese instead and baked till melted. It rocked! - 7/12/12

While this picture is 'pretty', it does NOT reflect the instructions for the recipe. We are real people, making real food. We love to experiment but if the picture does not reflect the recipe or at least tell us how to achieve the result, it is useless to us. Not rated due to not trying yet. - 7/9/12

Thanks, JoyceBrown, for the instructions on how to make the recipe properly, as per the photo. I will be making this next week, although likely I will sub goat cheese for the feta (less salt). - 10/22/12

thats a tiny amount of cheese and pesto for each zucchini half! 1/8 tbs of pesto and 1/4 tbs cheese? why not bump that up a little, a few more calories but addedd protein etc? Also, what is that a pic of? Cuz its certainly not this recipe! - 7/11/12

Can someone help me out? I'd like to make this for guests this weekend.. the picture looks so cool! But nowhere in the recipe does it explain how to achieve that... are the strips of zucchini just rolled up? - 6/14/12

  • Made this for a whole crowd and it was a HUGE hit! I scooped out a bit of the insides of the zucchini to help the pesto stay on while cooking. - 6/20/13

  • Amazing to go to great lengths to just make some zucchini, won't last long as time goes on if one is on a diet though...quick is better. Just cut zucchini up and saute. - 5/1/13
