Spanish Rice

Introduction

Yummy rice dish. Yummy rice dish.
Number of Servings: 12

Ingredients

    1 1/3 cups brown rice
    1 tbsp extra virgin olive oil
    1 medium onion, diced
    1 medium green pepper, diced
    1 can (398ml) diced tomatoes, no salt added
    1 can (156ml) tomato sauce, no salt added
    1 tsp salt
    2 tsp sugar
    1.75 cups water

Directions

Preheat oven to 350. Saute onions and peppers for about 5-8 minutes. Add diced tomatoes, tomato sauce, water, salt & sugar. Bring to a boil. Transfer this to a 9x13 casserole dish, add rice & cover, and put into oven and bake for about 40 minutes. When done, may garnish with cheese and veggie bacon.

Serving Size: Makes 12 1/3 cup servings.
