Dr. Poon's Mashed Cauliflower

Introduction

Number of Servings: 4

Ingredients

    2 cups of Cauliflower
    2 tbsp of Allegro 9% Milk Fat Light Cream Cheese (can be found at the Ontario Nutrion Corporation).
    1/2 tsp. Half Salt

    TIPS:
    Melt some fat-free margarine to put on top to increase the flavour.
    Excellent side dish for meat dishes.
    Use ultra low-fat cream cheese to decrease the fat content of the dish. However, the net carbohydrate content will increase slightly. The final product is less creamy.


Directions

Cut cauliflower into small pieces. Boil cauliflower in water until very soft. Remove from water and put all the ingredients into a blender and blend at high speed until smooth. Serve hot or use the microwave to reheat before serving.
