2 seeded, chopped green bell peppers
1 seeded, chopped red bell pepper
1 seeded, chopped yellow bell pepper
(may substitute different bell peppers as desired)
1 pint sliced fresh mushrooms
1-12 oz package imitation crab
8 oz cooked pasta
1 large tomato, diced
1 tbsp olive oil
2 tbsp lemon juice
1 tbsp crushed basil
2-4 tbsp lime juice
salt and pepper to taste
Saute' mushrooms, crab, bell peppers, and basil in the skillet.
Add lime juice as water evaporates to keep moist.
While meat and vegetables are cooking, cook pasta according to package instructions until done.
When pasta is cooked, mix it with the vegetable/meat mixture in the large skillet. Continuing cooking until peppers and mushrooms are cooked and meat and pasta are heated through.
Remove from heat. Mix in diced tomato.
Salt and pepper to taste.
