Chicken Pasta Salad

Introduction

This is a great pasta salad to have around in the summer, light on pasta, heavy on vegetables. I love making a big batch so on especially hot evenings something is always prepared, and it is great to take to work for lunch! I love making a big batch so on especially hot evenings something is always prepared, and it is great to take to work for lunch!
Number of Servings: 8

Ingredients

    Healthy Harvest Rotini Pasta, Cooked and Drained 8 oz (dry weight)
    Chicken Breast, no skin cooked and diced, 3 ounces
    Broccoli 1 cup, chopped, steamed al dente
    Carrots 1 cup, chopped, steamed al dente
    Red Onions, finely diced raw, 1/4 cup
    Zucchini, raw 1 cup, sliced
    Spinach, raw fresh, 3 cup
    Red Ripe Tomatoes, raw fresh, 1 cup, chopped
    Mozzarella Cheese part skim milk, 1 oz shredded
    Kraft Fat Free Italian Salad Dressing, 1/2 cup

Directions

Cook pasta until al dente
Steam Broccoli and Carrots until JUST al dente
Boil Chicken with out skin until cooked through, cool and dice
Mix pasta, chicken and all chopped/diced vegetables
Toss with shredded cheese and dressing
Chill for at least 60 minutes
