*Whole Wheat Flour, 1.25 cup
Kellogg's All-Bran Cereal, 0.75 cup
Baking Soda, 1 tsp
Salt, .5 tsp
Raisins, 1 cup (not packed)
Egg, fresh, 1 large
*Skim Milk, 1 cup (add 1-2 T. vinegar to make this into buttermilk)
Banana, fresh, 1 small
*Canola Oil, 3 tbsp
Honey, 3 tbsp
Combine first 4 ingredients and half of the raisins.
Put remaining ingredients in a blender and mix until combined and raisins are chopped up. Spoon into muffin tins. (I use silicone cups sprayed with nonstick spray, which are a little bit smaller than a muffin tin is.)
Bake 18-22 minutes.
Serving Size: makes 15-16 muffins
