Easy Crock Pot Sweet Potato and Carrot Soup

Introduction

I needed something filling and delicious to make with the ingredients I had on hand. I love Butternut Squash soup so I made this in the same fashion and it turned out pretty good! I needed something filling and delicious to make with the ingredients I had on hand. I love Butternut Squash soup so I made this in the same fashion and it turned out pretty good!
Number of Servings: 4

Ingredients

    2 Sweet Potatoes peeled and cubed
    2 Cups Baby Carrots (15-20 carrots)
    2 Cups reduced sodium Chicken Broth
    1 tbsp ground Cinnamon
    1 tbsp ground Cayenne Pepper (more or less to taste)
    1/8 tsp Nutmeg
    1/8 tsp Allspice

Directions

Place all ingredients in Crock pot and cook on low until tender (about 4-6 hours)
Transfer to blender or food processor and puree.
Add a scoop of fat free sour cream if desired.
Enjoy!

Serving Size: Makes about 4 1-cup servings
