Introduction

Number of Servings: 8

Ingredients

    2.25 lb beef bottom round, trimmed of fat, cut into cubes
    1/3 cup flour
    1/2 tsp salt
    1/2 tsp black pepper
    1 Tbsp Olive Oil, divided
    4 cups 99% fat free beef broth (Kroger)
    1/2 cup Merlot
    1 large onion, chopped into large bites
    Noodles

Directions

Combine flour, salt and pepper in large zip bag.
Add meat cubes and shake well to coat
In large skillet brown the meat in the olive oil (I had to do this in 2 batches so use only half the oil for the first batch)
Remove the meat and put it in a slow cooker.
Pour the merlot (half per batch) into the hot skillet and scrape the bits into the slow cooker.
Add the chopped onion and beef broth to the cooker.
Cook on high for at least 4 hours, may need to cook longer.
Serve over hot cooked noodles.
The nutrition value is based on Kroger enriched wide egg noodles. I would have used wheat noodles but I sent my significant other to the store and I don't have him trained right just yet! (I also would have bought the low sodium broth.)
