Thai Coconut Shrimp Soup

Ingredients

    1.5 lb peeled and deveined large shrimp
    1 T. Thai seasoning
    Cooking Spray
    1 c. refrigerated prechopped tricolor bell pepper
    2.5 c. fat-free, less-sodium chicken broth
    1 T. fish sauce
    1 can light coconut milk
    1 T. lime juice
    Cilantro (optional)

Directions

Sprinkle shrimp with thai seasoning; toss well.
Heat a large deep-dish pan over medium high heat, coat pan and shrimp with cooking spray.
Add shrimp to pan; Saute 2 minutes or until almost done. Remove shrimp from pan; set aside.
Coat pan with cooking spray; add bell pepper - saute 2 minutes.
Add broth and fish sauce, bring to boil.
Reduce heat, simmer 5 minutes.
Stir in coconut milk and shrimp.
Cook 2 minutes or until thoroughly heated.
Remove from heat; stir in lime juice.
Stir in cilantro if desired.

Serving Size: makes 3 servings - 2 cups per serving
