Introduction

This is a flexible recipe and is easily doubled and tripled. I have even frozen the chickien and marinade together. We like it over rice or other grains. Number of Servings: 8

Ingredients

    1/2 cup orange juice
    3 Tblsp Lite Soy sauce
    2 Tblsp Honey
    1 tblsp Dijon mustard
    1 t curry
    2 large cloves garlic
    8 skinless chicken thighs, or boneless skinless breast.

Directions

Mix all ingredients except chicken in a bowl. Add chicken marinate for at least 2 hours or overnight.
Bake in a 350 degree oven for 45 minutes turning once.
Serve over rice or other grains.
