Reduced-Carb Gluten-Free Pancakes

Introduction

I combined the best of a few different protein pancake recipes. Add bananas, peaches, blueberries, or whatever appeals to you. These are really good! Number of Servings: 10

Ingredients

    1 cup part skim Ricotta Cheese
    3/4 cup Milk
    3 Large eggs
    2 Tbsp butter
    Dash of salt
    1 tsp baking powder
    1/2 cup buckwheat, millet, or oat flour (all gluten free!) may use a mixture of them
    Sweetener, equivolent to 2 Tsp sugar, or use the sugar!


Directions

Pre-heat griddle to 350-375 degrees. Lightly coat with cooking oil of your choice. Combine all ingredients and blend until smooth. Pour 1/4 c. batter onto pre-heated griddle and cook until edges dry out and middle and edges bubble, then flip over. Cook an additional 45-60 seconds.
Serve with jelly, apple butter, or syrup.
