Chocolate Raspberry Muffins

Introduction

Number of Servings: 13

Ingredients


    2 cups *Whole Wheat Flour
    1 cup Granulated Sugar
    2 tsp Baking Powder
    1/2 tsp baking soda
    1/4 tsp Salt,
    1/3 cup Cocoa, dry powder, unsweetened
    3 tbsp melted Butter, unsalted
    1 large Egg
    3/4 cup Milk, nonfat
    1/2 cup Applesauce, unsweetened
    2 cups fresh Raspberries


Directions

Preheat oven to 375. Spray oil onto muffin tin. Combine and sift flour, baking powder, baking soda, salt, cocoa. Make a well in the center and add the melted butter, egg, milk and applesauce. Stir until well mixed. Add the raspberries and stir just until the berries are well-integrated. Spoon batter into each muffin tin. I ended up with enough for 13 muffins, but the recipe was designed for 12 muffins. Bake until dry and springy about 25 to 30 minutes. A toothpick in the center should come out clean (if you don't poke a raspberry).
