Sweet Corn, Avocado, Black Bean Salad

Introduction

This was a Whole Foods Recipe meant to go with grilled salmon, but I make it without the salmon, and I added black beans. This was a Whole Foods Recipe meant to go with grilled salmon, but I make it without the salmon, and I added black beans.

Ingredients

    4 ears fresh corn, removed from cob
    1 ripe avocado, diced
    3/4 cup black beans
    1/2 cup red onion, diced
    1/2 cup diced tomatoes
    1/4 cup fresh cilantro, finely chopped (or cilantro in a tube)
    1 tbsp white wine vinegar
    2 tbsp olive oil
    salt and pepper, to taste

Directions

Combine corn, beans, avocado, onion, tomato, cilantro, vinegar and olive oil in a bowl and gently toss together. Season to taste with salt and pepper.
