1 cup turnips, cubed
1 cup carrots, chopped
1/2 of a medium red onion, cut into 4 pieces
1/2 tablespoon olive oil
1/4 teaspoon packed brown sugar
dash of salt
1/4 tablespoon of balsamic vinegar
dash of pepper
2. Combine first six ingredients in a bowl. toss to combine and coat.
3. Spread mixture on a shallow roasting pan.
4. Bake for 1 hour, stirring after 30 minutes.
5. Add vinegar and pepper, tossing to coat. Serve.
Serving Size: makes 2 servings (approximately 1 cup)
