IntroductionA refreshing low carb treat for those hot summer days A refreshing low carb treat for those hot summer days
1 cup Light Coconut Milk (or use regular but it will be higher fat, no carbs either way)
1/2 cup heavy cream - whipped to about 1 cup volume
6 T unsweetened shredded coconut
sweetener to taste
Spoon into dessert cups and freeze.
Have patience until frozen then enjoy!
(can also be made into pops if you've got molds for that)
