Low Carb Coconut Freeze

Introduction

A refreshing low carb treat for those hot summer days A refreshing low carb treat for those hot summer days
Number of Servings: 4

Ingredients

    1 cup Light Coconut Milk (or use regular but it will be higher fat, no carbs either way)

    1/2 cup heavy cream - whipped to about 1 cup volume

    6 T unsweetened shredded coconut

    sweetener to taste


Directions

add sweetener to liquid heavy cream and whip till stiff. Fold in coconut milk and shredded coconut
Spoon into dessert cups and freeze.
Have patience until frozen then enjoy!
(can also be made into pops if you've got molds for that)
