Ingredients

    3C jarred spaghetti sauce tomato basil
    8 oz whole wheat penne pasta
    4 chicken thighs boneless skinless
    2C mushrooms sliced
    1C red bell pepper sliced (slice each piece in half)
    1C green bell pepper sliced (slice each piece in half)
    8 oz red wine
    1 C chopped onions
    3 cloves garlic chopped
    2 T olive oil
    3 T (6 leaves) chopped fresh basil
    4 T italian flat leaf parsley chopped
    1/2T red pepper flakes (opt)
    1/2T grated nutmeg
    4 T grated parmesan cheese (use good cheese)

Directions

brown chicken in olive oil and remove from pan. Sautee onions and garlic till soft; add all veges; sautee for 10 minutes; add 3 C sauce & wine; add nutmeg; cook for 20 minutes; return chicken thighs to pan; simmer for 20-30 minutes (carefullystirring occasionally so sauce doesn't burn on bottom). Serving 1 C pasta; top w/ 1 C saude; top w/ 1 chicken thigh; add 1 T cheese. Mangia - delizioso.
