Ingredients

    Salad:
    4 small, fresh beets
    1/2 tbsp olive oil
    1/4 cup walnuts, chopped
    1/4 cup (1 oz.) goat cheese crumbles
    5 cups leaf lettuce, shredded

    Dressing:
    1 tbsp olive oil
    1 tbsp white wine vinegar
    juice of 1/2 an orange
    1 tsp chopped fresh thyme
    1/4 tsp fine sea salt

Directions

Trim and peel the beets and steam them for 5 minutes. Let cool to the touch then slice into 1/2" slices. Brush each side with olive oil then grill for about 4-5 minutes on each side until tender. Let cool then cut into quarters.

In a salad bowl, arrange the lettuce, top with walnuts, goat cheese and the grilled beets.

Whisk together the olive oil, vinegar, and orange juice. Add the thyme and salt, mixing well. Drizzle over the salad. Serve immediately.
