Pumpkin Oatmeal

Ingredients

    1 (14-ounce) can pumpkin puree (NOT prepared pie filling)
    2 cups water (+ additional 1-2 cups*)
    2 cups unsweetened rice milk, almond milk, etc. (or more water)
    1/4 teaspoon kosher salt
    1 Tbsp. or more (I use a palm full) pumpkin pie spice
    2 cups gluten-free steel cut oats

    Garnishes per serving:
    Drizzle of pure maple syrup
    2 tablespoons raisins
    1/8 cup pepitas

Tips

*I usually need to add more water, starting about halfway through cooking and often as much as 1-2 additional cups. If it's very thick but not tender yet, add about 1/4-1/2 cup at a time more.


Directions

In large saucepan over high heat, combine the pumpkin puree, water, milk, salt and spices. Bring to a boil.

Add the oatmeal. Turn the heat down and cook according to your oatmeal instructions (low and slow works best for me). Stir often.

Meanwhile, in a small skillet over medium heat, toast the pepitas until they're fragrant and a gentle golden brown.

Once the oatmeal is cooked (each grain should be tender), serve with the pepitas, raisins and maple syrup.



Serving Size: Makes 4 servings.
