Hummus with Sun-Dried Tomatoes

Introduction

My family loves hummus, and this couldn't be easier to make! Play with the recipe to find the flavors you like best; some like it with garlic, some with basil or other herbs. I use organic canned beans; if you don't mind taking a little extra time, cooking dried beans yourself is even better! My family loves hummus, and this couldn't be easier to make! Number of Servings: 6

Ingredients

    15 oz. cooked organic garbanzo beans
    2 Tblsp. sun-dried tomatoes packed in olive oil
    2 Tblsp. cumin
    1 Tblsp. dried parsley
    1 tsp. salt (or to taste)
    1 Tblsp. good quality extra-virgin olive oil

Directions

Drain beans, reserving liquid. Place in food processor with other ingredients. Add a tablespoon or two of the reserved liquid and blend, adding more liquid as necessary to reach desired consistency.

Place in serving dish and drizzle with olive oil. Serve with cut up veggies and/or pita bread.
