Whole Wheat Oatmeal Pancakes

Ingredients

    1 1/4 cups whole wheat flour
    2 teaspoons baking powder
    1/4 teaspoon salt
    1 egg
    1 cup milk, plus more if necessary
    1/2 cup unsweetened applesauce
    1/4 cinnamon
    1 tsp vanilla extract
    1/2 c oats

Directions

Mix dry and wet ingredients in two separate bowls. Slowly mix in dry ingredients into wet ingredients. On a skillet heated over medium-high heat, pour approximately 1/4 cup of the batter onto the skillet. Cook until bubbles begin to form on the outer edges of the pancake. Flip pancake and cook the other side until the bottom is golden brown.

  • These are terrific! I love blueberries, and these are the easiest, yummiest, healthiest pancakes I've had in ages! I made them with non-fat milk, and since I didn't have any applesauce on hand I used a tablespoon of splenda, and they were delicious. Can't wait to try it again with applesauce. - 5/31/10

  • These are wonderful, I'd been wanting to find a good recipe for blueberry pancakes and the fact that these are whole wheat makes them even better. I love pancakes and I can eat these and be proud that I made such tasty nutritious pancakes. - 2/18/10

  • My family really liked these! I found that the milk needed to be reduced a bit (a tad too runny) but other than that, they were fabulous! I loved the fact that these used real whole wheat -- something that I am a stickler for! Very good!!!! - 3/19/09
