Ingredients

    *Eggland's Best Egg, 1 egg, 5 serving - beaten
    *Fat Free Half & Half, Great Value, 4 tbsp
    Onions, raw, .25 cup, chopped
    Celery, raw, .25 cup, diced
    Green Peppers (bell peppers), 0.25 cup, chopped
    Shrimp, cooked, 4.5 oz, chopped
    *Weight Watchers Shredded Four Cheese Mexican Style, 0.33 cup
    *McCormick Old Bay Seasoning, 0.25 tsp
    *Black Pepper, 2 tsp
    1 tsp olive oil

Directions

Whisk 5 eggs along with the half and half, set aside; Chop vegetables and shrimp; sautee in olive oil until just tender; add chopped cooked shrimp; sautee for one minute; add egg mixture, add seasonings, stir gently until cooked through; add cheese, stir; serve warm.
