Ingredients

    1 20oz package of lean ground turkey
    1/2 cup diced onions
    2 cloves of garlic minced
    1/4 cup diced red pepper
    1 tbsp canola oil
    1/4 cup cream cheese
    3.5 oz feta cheese with tomato & basil
    4 poblano peppers
    about 2 tblsp paprika and cumin
    salt and pepper to taste
    2 tbsp chopped fresh cilantro

Directions

Heat oven to 350 degrees, place 4 poblano peppers in oven for approximately 15 min.

Saute onion, garlic, red pepper in cast iron skillet till tender.
Add ground turkey, salt and pepper, cumin, paprika, and a little dash of red pepper flakes. On med low heat cook until meat is no longer pink. Add cream cheese and mix well, add feta and cilantro and cook over low heat until hot.

After pepper have cooled enough to be handled with hands, remove stem and seeds. Fill with meat filling and place in a casserole dish sprayed with Pam and bake for 15 minutes.
