Mexican Garlic Soup

Introduction

Ingredients

    1 T Olive Oil
    1 head garlic, peeled and chopped
    1/2 baguette, cut into 1/4" rounds
    1 small can mild chopped chiles
    2 cans diced tomatoes with garlic and onion
    6 cups vegetable broth

Directions

In skillet, saute garlic in oil for 1 minute. Transfer garlic to stock pot. Toast rounds in remaining olive oil, turning once, until golden brown on both sides. set rounds aside. Put chiles and tomatoes in skillet and stir over high heat for 1 minute. Transfer to stock pot. Add vegetable broth and salt, bring to a boil and simmer for 20 minutes. Ladle into bowls and float bread rounds on top. Makes 7 servings.
