Ingredients

5 salmon fillets (4 oz. each), skinned if you like, patted dry
3 Tbs. butter, well softened at room temperature
2 Tbs. fresh lemon juice, warmed slightly
    2 Tbs. minced fresh ginger
    2 Tbs. snipped fresh chives
Sea salt and freshly ground black pepper

Directions

Pre-heat oven to 275F.

Combine the spread, lemon juice, ginger and chives in a small bowl. Set aside and keep at room temperature while the salmon cooks.

Sprinkle salmon with salt and pepper. Place on a baking sheet and cook until the meat begins to firm and the center of the salmon is just cooked through (10 to 12 minutes).

Spread or brush the salmon liberally with Lemon-Ginger Spread. Place under a pre-heated broiler for about 2 more minutes, or until spread is melted.

Makes five 4 oz servings.
