Mini Blueberry Muffins

Ingredients

1/4 cup orange juice
1 large egg
1 tablespoon vegetable oil
1/2 cup all-purpose flour
2 tablespoons sugar
1/8 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup fresh or frozen blueberries
Directions
Preheat the oven to 375. Line 12 cups of a mini muffin tin with paper liners.
Combine the orange juice, egg, oil in a small bowl. Whisk together the flour, sugar, baking powder, baking soda, and salt. Stir in the egg mixture until well blended. Fold in the blueberries and divide among the muffin cups.
Bake until golden and a toothpick inserted in the center of a muffin comes out clean, 10-12 minutes. Cool on a wire rack and serve warm.
