3 cups basil leaves
2 cloves garlic
1/4 cup pine nuts
1/4 cup nutritional yeast
1/2 cup olive oil
4 medium tomatoes, cored and halved
5 tbsp panko breadcrumbs
1 tsp panko bread crumbs
1. Process basil and garlic until finely chopped. Add pine nuts and yeast, process 1 minute until mixture is paste like. Add olive oil with motor running in a steady stream. Process 1 more minute until smooth. Season with salt and pepper.
1. Preheat oven to broil. Place tomatoes cut side up on baking sheet. Spread each half with 2 tsp quick pesto, sprinkle with 2 tsp panko crumbs. Broil 3-5 minutes until breadcrumbs are browned and pesto is bubbly.
Serving Size: Makes 8 half-tomatoes
