200 Calorie Tex-Mex Chicken

Introduction

Easy weeknight recipe for a healthy twist on Tex-Mex food. I serve with sour cream and it almost tastes like enchiladas. Easy weeknight recipe for a healthy twist on Tex-Mex food. I serve with sour cream and it almost tastes like enchiladas.
Number of Servings: 4

Ingredients

    4 small chicken breasts, boneless skinless (~ 1 lb.)
    1c salsa (traditional tomato based)
    1c shredded cheese, reduced fat
    4tsp taco seasoning


Directions

1. Preheat oven to 350F.

2. Place chicken in casserole dish & sprinkle both sides of each breast with 1 tsp taco seasoning.

3. Top each chicken breast with about 1/4c salsa (You do not need to "spread" it, it will do that on it's own)

4. Top each chicken breast with 1/4c low fat shredded cheese.

5. Bake for appx. 30-35 minutes until chicken is heated through. This can be broiled for a few minutes as well if you like bubbly cheese.

I serve with light sour cream for a few extra calories.
