300 Calorie Chicken Parmesan

Introduction

An Italian version of my quick & easy chicken. An Italian version of my quick & easy chicken.
Number of Servings: 4

Ingredients

    4 chicken breasts, small (~1 lb.)
    1c tomato basil (or marinara) sauce - nothing too chunky
    1c mozzarella, shredded (part skim)
    4 Tbsp parmesan
    4 tsp Italian seasoning**

    **(I LOVE to use Johnny's Garlic Spread sold at Costco)

Directions

1. Preheat oven to 350F.

2. Add chicken to 9x13 casserole dish, sprinkle each side with a garlic/italian seasoning.

3. Add 1/4c marinara to each chicken breast, then top each with 1 Tbsp parmesan, and 1/4c mozzarella.

4. Bake for 30-35 minutes until chicken is cooked through, you may use the broiler for a few minutes at the end to get "bubbly" cheese.

(Serve with fresh basil if you have it!)
