Berry Muffins

Introduction

I'm playing around with recipes to make them a bit healthier. This was done with raspberries but any berry could be subsituted. Not that sweet but still tasty. Number of Servings: 17

Ingredients

    Whole Wheat Flour, 1 1/3 cup
    Quaker Oats, 2/3 cup
    Baking powder, 3 tsp
    Brown Sugar, 1/3 cup

    Honey, 1 Tbsp
    Egg
    1% milk, 1 cup
    Butter, unsalted 1/4 cup

    Berries 1 cup (raspberries used in this recipe but can substitute)

Directions

1. Pre-heat oven to 400F

2. Mix dry ingredients in mixing bowl

3. Melt butter, mix together with egg, honey and milk.

4. Pour over flour mixture and mix gently. Just until flour is wet.

5. Add berries and mix gently.

6. Spoon into muffin cups and bake at 400F for 15 minutes.

Serving Size: Makes 17 muffins
