Really Easy Brunswick Stew

Ingredients

    1 1lb, 4 oz pkg refrigerated diced potatoes with onion
    4 cups fat-free, low sodium chicken broth
    1 (28 oz) can undrained diced tomatoes
    1 (15 oz.) can drained lima beans
    1 (18 oz) container refrigerated shredded pork or chicken barbecue (Lloyd's or another brand)

Directions

Open bag of diced potatoes, chopping larger pieces in half. Mocrowave them on high for about 5 minutes to make them more tender. Place the potatoes with onion in a Dutch oven and add the broth. Bring the mixture to boil on med-high heat. Reduce heat to medium; simmer 5 minutes. Stir in tomatoes, corn, beans and barbecue. Reduce heat to med-low and cook covered 20 minutes or until heated and vegetables are tender. It can cook an hour or two with good results.

Makes about 12 cups.
Serving size = 1/2 cup
