Ingredients

    3 eggs
    .5 cup vegetable oil
    2 cups sugar
    .5 cup applesauce
    4 cups pureed zucchini , mostly drained
    2 tsp vanilla
    3 cups flour
    3 tsp cinnamon
    1 tsp baking soda
    .25 tsp baking powder
    1 tsp salt
    .5 tsp nutmeg

Directions

Preheat oven to 325 degrees F. Grease and flour 2 9X5 inch loaf pans. In a large bowl beat eggs until light and frothy. Mix in oil, applesauce, and sugar. Stir in zucchini and vanilla. In a medium bowl, combine flour cinnamon, baking powder, baking soda, salt, and nutmeg. Stir into the egg mixture. Divide batter into prepared pans. Bake for 60-70 minutes or until done. (Note - if making mini loaves - makes 12 mini loaves and bake for 50-60 minutes.)

Serving Size: 48 servings (1/4 of a mini loaf or .5 in slice - 24 per loaf)
