Filipino Chicken with Adobo and Garlic Fried Rice

Introduction

Number of Servings: 6

Ingredients

    6 Chicken thights - bone and skin removed
    1/2 tsp Adobo Seasoning
    1/3 cup of White Venagar
    3 Cloves of Garlic
    1 Tblsp Olive Oil
    Salt - if needed
    1 to 2 Bay leaves
    Water

    Fried Rice:
    3 Cups of Long Grain Brown Rice (uncooked)
    3 Cloves of Garlic
    1 Tblsp Olive Oil


Directions

Remove skin and bone from chicken thighs - if too difficult to remove bones - just leave them in.

Combine chicken, garlic, bay leaves, vinegar, soy sauce and 1/2 c. water in a large pot.

Heat until boiling and stir frequently. Turn heat to medium and let simmer for about 30 minutes. Stir occasionally.

Steam the rice and chop garlic cloves into small pieces.

In a non-stick pan (or wok) add 1/2 Tbsp of Olive oil and let it heat for 1 minute till it starts to smoke a little. Add the garlic and let it sautee for about 30 seconds...then begin adding in rice one cup at a time constantly moving it around to blend with the garlic. You can add the remaining 1/2 Tbsp of Olive Oil to keep the rice from sticking.

Once the chicken is done simmering, serve it over the top of the rice.

One thigh and one cup of rice cooked is a serving.

NOTE: Some soy sauces are saltier than others, so the salt is added to this recipes nutrition details, but only use it if the chicken seems bland.
