zucchini over rice

Number of Servings: 4

Ingredients

    Zucchini, 1 cup, chopped
    Onions, raw, 1 medium (2-1/2" dia) chopped
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia) chopped
    Garlic, 3 cloves
    Olive Oil, 2 tbsp
    *White Rice, medium grain, 1 cup
    *Cumin seed, 1 tsp

Directions

make rice according to package instructions.

Meanwhile chop zucchini, tomato, and onion in 1/2 inch cubes. Place onion in oil (medium heat) until translucent. Add garlic and stir for about 1 minute. Add remainder of ingredients plus salt and pepper to taste. Simmer over low heat until rice is done. Spoon over rice to serve
