Judy's Fried Rice 1/2 cup serving

Ingredients

3 Tbs Extra Virgin Olive Oil
1 cup chopped onion
2 cups of thawed frozen green peas
3/4 cup of chopped carrots
6 cups of cooked brown rice
2 cups of thawed frozen corn kernels
4 Tbs of LIte Soy Sauce

Directions
I cook my brown rice in a Pampered Chef microwave cooker so it takes about 25 mins to cook the rice.
You sautee the onions in the olive oil in a large skillet then you add the peas & carrots and cook them stirring until they are a little tender. Add the rice & soy sauce and stir. I like my carrots a little crunchy so how long you stir & cook is up to you.
You can also add egg to the onions while you are sauting them. I would suggest using egg beaters.
After the fried rice is done, store in the frig. Makes a great lunch. Sometimes I will add some cut up chicken breast to it for lunch.
Makes (16) 1/2 cup servings.
