Kicked Up Tuna Melt (Emeril)Submitted by: WINTERFYRE
4 (6-oz) cans tuna packed in water, drained
1/2 cup kalamata olives, minced
1/4 cup plus 1 T low fat mayo
1/4 c finely chopped red onion
1 T plus 1 t capers, drained
1 T plus 1 t fresh ground black pepper
1 T fresh lemon juice
1/2 t salt
4 Sara Lee Delightful wheat hamburger buns
4 slices reduced fat provolone cheese, halved
Combine tuna, olives, mayo, red onion, capers, black pepper, lemon uice, and salt in medium bowl. Mix well.
Arrange bun halves on work surface. Divide tuna salad evenly among 8 bun halves over tomatoes. Top tuna salad with provolone slices.
Place sandwiches on sheet tray under broiler. Cook until cheese is golden and bubbly, about 5 minutes.
